- Ingredients
3g Salt
205g Butter (cubed)
7 Large eggs
290g Brown sugar
450g Corn syrup
4.5g Salt
4g Vanila bean seed ( 4 beans)
45g Bourbon
75g Butter
340g Pecans
- Directions
250g pastry flour, 3g salt, 205g Butter (cubed).refrigerate until cold--Mix with paddle,
low until crumbly, 55g ice cold water
flour hands and board as needed.
time - refrigerate 4 hrs
(optional but prevents crust from shrinking and cracking)
3 mm thick,
time refrigerate at least 1 hr
7 large eggs,
290g brown sugar,
450g corn syrup,
4.5g salt,
4g vanila bean seed,
45g bourbon,
Mix All--75g butter, 340g pecans, Poured into the mold
And then leave it in the oven on the degree 350F/175C
cook filling to 201F / 94C
this will take 45 - 90 min depending on oven
