Pisto Spain

Ingredients

3 cups Crushed tomatoes

3 cups Chopped onions

3 cups Chopped green peppers

6 cups Chopped zucchini

3 cups Diced potatoes

4 teaspoons Sugar

1/4 cup + 1/2 cup Olive oil

Salt


Preparatipon

1) In a pot, add 1/4 cup olive oil and the crused tomatoes.

2) Add the sugar and cook over medium heat 10 minutes.

3) In a different pot, add 1/4 cup olive oil and the potatoes.

4) Cook over medium heat for 10 minutes approx. Remove when poached.

5) In a different pot add the onions and the green peppers.

6) Cook them over medium heat for 15 minutes until poached.

7) Add the zucchini. Cook it 10 more minutes.

8) Add the poached potatoes.

9) Add the tomato sauce.

10) Simmer for 20 minutes
